It is from a journey from Alsace to Austria via Germany that this mischievous effervescence is born. Auxerrois, a native of Lorraine, gives it all its finesse and its subtle balance between roundness and acidity. Grüner Veltliner, an emblematic Austrian grape variety, makes it soar thanks to its lightness and suppleness. As for Pinot Noir, it brings it power and body. A meticulous composition whose harmony you will savor.
In order to preserve them as best as possible, the berries are harvested manually before being pressed in whole bunches in our cellars. We then extract a faithful expression through vinification in stainless steel vats. The aging is carried out in these same vats, except for 10% aged for 6 months in barrels. And to obtain these elegant bubbles, we logically chose the traditional method with a second fermentation in the bottle. We also worked without dosage and without sulfite. The result is a piercing brut nature whose drawing took place on March 25, 2022 and disgorging on July 10, 2023.
Tasting
Its charming, alluring nose with tender contours announces this effervescent before
let it reveal itself on orchard fruits and flowers. The Williams pear, the flower of
elderberry and their roundness are adorned with a slightly smoky character. On the palate, a thin lemony film gives the direction, a chalky structure. Immediately, its fine bubble and
discreetly caresses the tongue as it moves towards a pulpy finish.
