Gudule's brigade has selected no less than 6 grape varieties to compose the recipe for this Retour au Marché. The greed and freshness of Gamay meets the power of Carignan. The profusion of black fruits of Grenache contrasts with the tannins of Mourvèdre. A touch of Cabernet Franc for complexity and Sangiovese for structure complete the picture.

Careful selection of the basic ingredients is essential, but it would be nothing without all the work done behind the stove. This is why our grapes are harvested by hand, and this crop is completely destemmed. We let ourselves be guided by the expression of the fruit, doing our utmost not to rush it. Thus, the vinification and maturing took place exclusively in stainless steel vats, and the 11,000 bottles benefited from a light filtration.
