This sparkling cuvée in every sense of the word surprises, seduces and dazzles with every sip. With spirit and without artifice, we have married Auxerrois, Grüner Veltliner and Pinot Noir to offer you a terribly biting tasting.

Blend and vinification

It is from a journey from Alsace to Austria that this mischievous effervescence is born. The Auxerrois, a native of Lorraine, gives it all its finesse and its subtle balance between roundness and acidity. The Grüner Veltliner, an emblematic Austrian grape variety, makes it take flight thanks to its lightness and suppleness. As for the Pinot Noir, it brings power and body. A meticulous composition whose harmony you will savor.

In order to preserve them as well as possible, the grapes are harvested manually before being pressed in whole bunches in our cellars. We then obtain a faithful expression of the wine through vinification in stainless steel vats. The wine is aged in the same vats, except for 10% aged in barrels for 6 months. And to obtain these elegant bubbles, we logically chose the traditional method with a second fermentation in the bottle from Champagne. We also worked without dosage and without sulfite. The result is a piercing brut nature which was bottled on April 26th 2021 and disgorged on July 18th 2022.

Taste

Theeffervescence au palais 2020 is impetuous throughout the tasting. Its pale yellow color with green reflections gives way to a petulant, almost frenetic bouquet, oscillating between exotic fruits, white flowers, sweet spices and citrus. Extraordinarily refreshing! A vintage of character, amazing in the nose as well as in the mouth, to which the Pinot Noir brings a beautiful matter, and the other grape varieties a vivacity that puts the taste buds on the alert.

To honor it, serve it within two years. You can then enjoy it as an aperitif, on its own, or play with surprising and explosive combinations. Seafood such as oysters are an ideal ally and, for the more daring, try a slightly aged goat cheese.
