This sparkling cuvée in every sense of the word surprises, seduces and dazzles with every sip. With spirit and without artifice, we have married Auxerrois, Grüner Veltliner and Pinot Noir to offer you a terribly biting tasting.

Blend and vinification

  • Auxerrois - France, Alsace, Orschwiller

  • Pinot Noir - Germany, Pfalz, Eschbach

This mischievous effervescence is the result of a journey from Alsace to Austria via Germany. Auxerrois, a native of Lorraine, delivers all its finesse and subtle balance between roundness and acidity. Grüner Veltliner, the emblematic Austrian grape variety, makes it soar with its lightness and suppleness. Pinot Noir adds power and body. A meticulous composition whose harmony you will savor.

In order to preserve the grapes as best as possible, they are hand-picked before being pressed in whole bunches in our cellars. The wine is then vinified in stainless-steel vats to give it its full expression. The wine is aged in the same vats, except for the 10% aged for 6 months in barrels. And to obtain these elegant bubbles, we logically chose the traditional method with secondary fermentation in the bottle. We also worked without dosage or sulfites. The result is a piercing brut nature, bottled on March 25, 2022 and disgorged on July 10, 2023.

Taste

A charming, enticing nose with tender contours heralds this effervescent, before revealing orchard fruits and flowers. Williams pear, elderflower and their roundness take on a slightly smoky character. On the palate, a thin, lemony film sets the tone: a chalky structure. Immediately, its fine, discreet bubbles caress the tongue on their way to a luscious finish.

To do it justice, serve it within two years. You can then enjoy it as an aperitif, on its own, or play with surprising and explosive combinations. Choose fine, neutral dishes and prefer fusion pairings.

Grilled langoustines with tarragon, edamame and snow peas.
