We drew our inspiration from the Pyrenees to Alsace to write a score full of accuracy. Exotic notes emerge from the Petit Manseng, also famous for its natural acidity and fatness. The Riesling offers a superb interpretation between vivacity, power and persistence. Finally, the Gewurztraminer closes this recital with softness thanks to its density and its unctuousness.
From the vine to the glass, the making of a wine is worthy of the greatest works of art. The grapes are harvested by hand before arriving in our cellars. With the same precision as a master conductor, we adapt to our grape varieties. The Petit Manseng is de-stemmed and benefits from a 24-hour skin maceration before pressing, while the Riesling and Gewurztraminer are directly pressed in whole bunches. The same goes for the maturation. For the first, a third of the volume remains 6 months in demi-muids. The rest is aged in stainless steel, as for the other two varieties. We do not use fining but a light filtration before bottling for the 3,900 bottles and 100 magnums.
