Blend and vinification

  • Petit Manseng - France, Jurançon (Lucq de Béarn)
  • Riesling - France, Alsace (Riquewihr)
  • Sauvignon gris - France, Bordeaux, Entre-deux-mers (St Queyret de Pouillac)

To compose this score, we travelled through the French vineyards. First, Jurançon, with a Petit Manseng bursting with aromas and finesse. Then Alsace, with a Riesling that does not shy away from complexity and vivacity. Finally, the Bordeaux region, which delivered the freshness and exotic notes of the Sauvignon Gris.

Faced with grape varieties with such an assertive character, we had to redouble our sensitivity. For this is also the essence of a successful work of art, to remain attentive to nature and what it generously offers us. The grapes were therefore harvested by hand to preserve the fruit. And we have continued this philosophy in our cellars. While the Riesling was aged exclusively in stainless steel tanks throughout the process, the Petit Manseng and Sauvignon Gris were aged in barrels for 6 months. No fining or filtration was carried out for the 3,750 bottles and 200 magnums.

Let yourself be taken on a fabulous sensory journey. If its golden colour will not fail to dazzle you, it is the first scents that will make your enthusiasm soar. Stone fruits impose themselves, underlined by a light woody note. On the palate, fatness and opulence are the order of the day, with a delicious vivacity on the finish to balance it all out.  

No doubt you will appreciate it with gastronomic dishes such as a gourmet foie gras. However, for a perfect symphony, make it the companion of your cheese platters or your fatty fish, such as salmon, in sauce.
