This mischievous effervescence is the result of a journey from Alsace to Austria via Germany. Auxerrois, a native of Lorraine, delivers all its finesse and subtle balance between roundness and acidity. Grüner Veltliner, the emblematic Austrian grape variety, makes it soar with its lightness and suppleness. Pinot Noir adds power and body. A meticulous composition whose harmony you will savor.
In order to preserve the grapes as best as possible, they are hand-picked before being pressed in whole bunches in our cellars. The wine is then vinified in stainless-steel vats to give it its full expression. The wine is aged in the same vats, except for the 10% aged for 6 months in barrels. And to obtain these elegant bubbles, we logically chose the traditional method with secondary fermentation in the bottle. We also worked without dosage or sulfites. The result is a piercing brut nature, bottled on March 25, 2022 and disgorged on July 10, 2023.
