- Syrah - France, Languedoc (Laure-Minervois)
- Sangiovese - Italy, Tuscany (Montepulciano)
In creating a gourmet and balanced dinner, every ingredient is important. That's why we've scoured the Mediterranean vineyards in search of intoxicating flavors. In Languedoc, Syrah reveals an incredible fruitiness. Between alcoholic richness and aromatic power, it produces full-bodied wines that do not lack delicacy. In the heart of Tuscany, Sangiovese brings out the wild spices and robust tannins. A battle of the titans.
Modern and full of creativity, this Dîner en Ville leaves no room for chance. The berries are hand-picked to select only those with the best potential. A work of goldsmith which continues in the cellars. After a vinification in stainless steel tanks which preserves the purity of the fruit, we proceed to a customized maturation. First 6 months in demi-muids and barrels of three wines, then 18 months in stainless steel tanks. No fining or filtration for the 5,000 bottles and 200 magnums.
Taste
Its bewitching dark purple color catches the eye. The bouquet is largely dominated by spices, especially pepper. They meet touches of black fruits, violet and undergrowth which bring complexity to the whole. Nicely round on the palate, it reveals a pleasant acidity on the finish.
We recommend opening it a little in advance and decanting it for optimal tasting. To be drunk within six years, it will appreciate the company of powerful meats, roasted, marinated or topped with a strong sauce. Game, duck or lamb for example.
